This recipe birthed from a sudden craving for mushrooms & melted cheese on
a lazy Saturday afternoon. My husband & I slept in, had a late breakfast & decided we'd
have a light, nutritious lunch. Something easy, quick but still flavoursome. Mushrooms are delicious &
contains a host of nutritional benefits, such as Vitamin D, selenium and potassium. They cook
within minutes, making them one of the most handy ingredients to have at home. Chopped vegetables
on the other hand are a great way of using leftovers in the fridge & they are cheap,

ingredients
- 6 portobello mushrooms, washed
- 1 large capsicum, chopped
- 1 large carrot, peeled & chopped
- 2 celery sticks, chopped
- 1/2 yellow onion, chopped
- 2 tbsp olive oil
- salt & pepper to season
- 3/4 cup shredded mozzarella cheese (or any cheese)
- fresh herbs to garnish (parsely/basil/coriander)
method
- Pre-heat oven to 180'C.
- Heat oil in a skillet over medium heat. Saute onions until aromatic.
- Add chopped capsicum, carrot & celery. Cook until slightly tender, then season with salt & pepper.
- Place portobello mushrooms on a baking tray lined with baking paper.
- Spoon vegetable mixture evenly onto each portobello mushroom & top with cheese.
- Place baking tray in the oven & bake for 15-20 minutes, or until the mushrooms are cooked.
- Remove mushrooms from the oven & garnish with fresh herbs. Best served while still hot! :)
