I'm always trying to find healthier alternatives to a favourite dish, so one day,
I rummaged through my pantry, picked out some of my favourite staple ingredients & attempted to
re-create a healthier version of chicken katsu- a savoury Japanese dish of breaded chicken cutlets deep
fried to golden perfection. It's one of my weaknesses (yes, I'm human too) when I crave for
Japanese food. I'm proud to say that I may have found THE recipe
for all the chicken katsu lovers out there who wants a more nutritious
& exciting twist to the dish.

ingredients
- 1 chicken breast, butterflied & cut into 1-inch strips
- 1/2 cup quinoa
- 4 cups salad greens
- 1/2 lemon, halved
- 2 tbsp grapeseed oil
- 5 tbsp almond meal
- 1/2 tbsp smoked paprika
- 1/2 tbsp ground cumin
- 1/2 tbsp dried oregano
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
method
- To cook the quinoa, combine quinoa & 1 cup water in a small/medium saucepan. Bring to a boil over high heat. Once the water is boiling, reduce heat to low, cover & simmer until most of the liquid has been absorbed by the quinoa. This will take approximately 15-20 minutes.
- Fluff quinoa with a fork before plating.
- In a medium bowl, add almond meal, smoked paprika, ground cumin, dried oregano, salt & pepper to make the crumb mix.
- Lightly coat the chicken strips in grapeseed oil & toss in crumb mix, coating evenly.
- Heat grapeseed oil in a non-stick skillet on medium heat. Pan-fry chicken strips until golden brown.
- Serve quinoa, chicken katsu & salad greens with a wedge of lemon.
