I always strive to get creative in the kitchen by incorporating my favourite flavours
into favourite foods to keep things interesting, but still healthy. This recipe was also featured

*Tip: Leftover pancakes kept in an air-tight container can last up to 5 days in the fridge.
Just pop em' into a toaster or microwave oven for 2-3 minutes before serving. If you have a nut
allergy, swap the almond meal/flour with other flour alternatives.

ingredients
- 1 cup almond meal (or other nut flours)
- 1/4 cup shredded coconut
- 1 heaped tbsp matcha powder
- 1 1/2 tbsp chia seeds
- 1/2 tsp baking powder
- 2 eggs
- 1/2 cup low fat cow's milk/plant-based milk
- 1 tbsp vegetable/nut oil
method
- In a large bowl, add almond meal, shredded coconut, matcha powder, chia seeds, baking powder & eggs.
- Mix the ingredients with a whisk until well combined.
- Incorporate the milk & continue whisking until a smooth batter is formed.
- Heat oil in a non-stick skillet. Spoon 2 heaped tbsp of the pancake batter onto the skillet at a time and spread it out a little (pancakes will fall apart if too thin). *cooking 3 pancakes at once saves time
- Cook pancakes for 30-40 seconds on each side.
- Serve & enjoy! :)
