I have no words to do these healthy orange & poppyseed muffins justice. They taste divine with
the right amount of sweetness and are purely made out of wholesome ingredients (NO nasties)
easily obtainable all year round. Lots of fibre, Vitamin E, Vitamin C & protein your
body thrives on. Another added benefit of this recipe? Your kitchen will smell of summer
once they start baking. Mmmmm!
* Tip: When zesting oranges/other citrus fruits, avoid zesting the bitter pith (white part below the skin).
Purchase organic citrus fruits if possible when zest is required in a recipe to

ingredients
- 3 tbsp chia seeds
- 2 large organic oranges, juiced & zest
- 300g almond meal
- 2 tbsp honey
- 1/4 cup poppy seeds
- 3 eggs
- 1 tbsp lemon juice
methods
- Preheat the oven at 160C.
- Mix chia seeds with 6 tbsp of water in a small bowl. Leave aside for chia gel to form.
- In a large mixing bowl, combine orange juice & zest, almond meal, honey, poppy seeds, eggs & lemon juice. Mix until well combined, manually or with a kitchen mixer.
- Fold chia gel into the muffin mixture.
- Grease muffin tray with vegetable oil or line individual muffin slots with baking sheet. Spoon mixture into approximately 9-10 muffin slots.
- Bake at 160C for 40-45 minutes, or until the cake tester/skewer comes out clean.
- Serve and enjoy with tea/coffee. (muffins can be refrigerated & kept up to 5 days)
