-kiwi & banana parfait-
I came up with this recipe one Sunday night when I was dreading the Monday blues.
I figured if I put together a breakfast treat that was visually appetising & palatable, it would
help me kickstart my week with a 'BANG!'. This recipe is fun to assemble and only requires a few
minutes from your busy mornings. It is also ideal for parents with little ones to get
them to eat healthy grains, dairy, nuts and fruits which they may not normally fancy
when served on its own.

ingredients
- 4 tbsp rolled oats, soaked overnight
- 6 tbsp plain greek yoghurt
- 1 large banana
- 2 kiwi fruits
- 2 tbsp pumpkin seeds
- 1/2 cup nuts (of your choice)
method
- To prepare the overnight oats, soak rolled oats in 3 tbsp water or milk in a small bowl. Cover with cling foil and leave in the fridge overnight. **this step has to be done 1 day prior
- Cut the banana and kiwi into smaller bite sizes and divide into 2 equal portions.
- To assemble, prepare 2 mason jars or mugs. Spoon 2 tbsp rolled oats into each mason jar/mug to form the base.
- Add 2 tbsp greek yoghurt over the oats. Add the banana slices, followed by 1 tbsp pumpkin seeds, 1/4 cup nuts and another tbsp of greek yoghurt.
- Lastly, top it off with kiwi.
