-scrambled eggs & avocado bruschetta-
I'm a huge fan of breakfast and I love to kickstart my day with a hearty & healthy meal.
This simple yet delicious recipe only calls for 3 main ingredients and it takes less than 10 minutes to prepare!
Eggs are a good source of protein and avocado contains healthy fats (omega-9) which is good for
your body. The end result of this recipe- fluffy & fragrant scrambled eggs on top of creamy avocado
slices & a crunchy piece of toast. You will not be disappointed, I promise.
*Note: I personally prefer using Australian avocados in my recipes because the consistency is softer and creamier.
If you're feeling adventurous, add a dash of cinnamon to the scrambled eggs.

ingredients
- 4 eggs
- 1 ripe Australian avocado
- 4 slices of wholegrain bread
- 3 tbsp olive oil
- 1 tbsp low fat milk
- 1/4 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tbsp fresh lemon juice (optional)
- fresh herbs to garnish (optional)
method
- Half the avocado, remove the pit and scoop out flesh with the halves intact using a spoon. Slice into thin pieces, season with lemon juice and put aside.
- In a medium bowl, whisk eggs, milk, salt and pepper until well combined.
- Place olive oil in a nonstick skillet over low-medium heat. Wait for 30 seconds.
- Add egg mixture and cook, continuously stirring with a spatula to form curd-like lumps of eggs. Cook until the eggs are barely set, then turn off heat immediately to avoid over-cooking the scrambled eggs.
- Toast bread slices for 2 minutes.
- Once ready, place 2 pieces of toast on each plate, top with avocado slices and scrambled eggs. Garnish with extra ground black pepper and fresh herbs (parsley, coriander or chives) if desired.
