-super simple banana bread-
I have a treat for all of you. Banana bread has always been one of my favourites since I
was little. Mum would buy a loaf from the bakery, slice it up & serve it with a cup of
warm milk, yum! There's something comforting & magical about banana bread, wouldn't you agree?
As most store-bought banana breads are laden with butter, saturated fats & refined sugar, I've come up with a healthier
alternative which is perfect for breakfast & beyond! Bananas add moisture & natural sweetness to baked goods,
which means that you can reduce the amount of sweeteners considerably. Almonds are crammed with protein, fibre &
heart healthy fats & olive oil is a good source of monounsaturated fats which is also kind to your heart.

*Note: Keeps in the fridge (covered) for up to 5 days. Heat up slices on a sandwich press/in a
microwave oven for 1 minute before serving for the best enjoyment on Earth!!

ingredients
- 3 medium very ripe bananas, mashed
- 3 eggs
- 2 cups almond meal (or any nut meal)
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 2 tsp cinammon powder
- 1/2 cup walnuts, chopped
- oats/pumpkin seeds/cacao nibs/coconut chips to top the batter before baking (optional)
method
- Preheat oven to 160C.
- Combine mashed bananas, eggs, almond meal, olive oil, honey, vanilla extract, baking powder, cinnamon powder & walnuts in a large mixing bowl.
- Mix ingredients until well combined, either manually or with a kitchen mixer.
- Pour batter into a baking tin lined with baking sheet or greased with vegetable oil to prevent the banana bread from sticking. Top the banana bread with a generous amount of your favourite toppings.
- Bake at 160C for 45-50 minutes, or until cooked through (a cake tester/a skewer inserted into the banana bread should come out free of batter/moist crumbs).
- Remove from the oven and let it cool completely before removing from the tin.
- Cut into slices and serve! Goes well with Greek yoghurt, fruits & nuts.
