ingredients
- 350g fettucini
- 2 chicken breasts, butterflied & cut into 1-inch strips (seasoned with S&P)
- 1 bunch asparagus, woody ends removed & cut into 4 parts
- 800g pumpkin, diced
- 2 cloves garlic, crushed & diced
- 2 tbsp extra virgin olive oil
- 1/2 tbsp chilli flakes
- 1/2 tbsp dried oregano
- 1/2 tbsp dried basil
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp lemon juice
- fresh parsley/parmesan cheese to garnish (optional)
method
- Bring a large pot of salted water to boil. Add fettucini to boiling water and cook for about 7 minutes.
- In the meantime, heat olive oil in a large non-stick frying pan over high heat. Add garlic and saute until fragrant.
- Add the chicken first and fry until cooked.
- Then add asparagus and pumpkin. Season with chilli flakes, dried herbs, salt and pepper. Cook for 1-2 minutes, tossing the ingredients together. Once done, remove from heat and leave aside.
- When fettucini is done, turn off heat and immediately drain, keeping 2 tbsp of pasta water.
- Bring frying pan with chicken, asparagus and pumpkin back on medium heat. Add fettucini, lemon juice & pasta water, tossing to combine all ingredients.
- Serve garnished with fresh parsley and/or a sprinkling of grated parmesan cheese.
